I’m still physically recovering from the wedding weekend which took a lot more out of me than I thought it would. I’m having a hard time sleeping between the tossing to find a comfortable position and waking up 4-5 times (or more) a night to use the bathroom. I’m feeling a shift in this pregnancy and I’m finding it’s hard to have the energy to make food. In this post, I also included my potato salad recipe so be sure to check that out!
Breakfast: 9:30 am
I made basic overnight oats with rolled oats, chia seeds, yogurt, and almond milk in a pint-size mason jar on Tuesday night. I made mine with vegan yogurt and one for Brady with whole milk yogurt. When I finally got out of bed to alleviate my pregnant hunger nausea, all I had to do was slice a peach and top with sliced almonds. It was like a refreshing peaches and cream dessert and tasted way too good to be a regular breakfast. I was sad it once it was gone.
Lunch: 12:30 pm
One of my first and still ongoing pregnancy cravings has been potatoes. Potato salad. Mashed potatoes. Baked potatoes. Waffle fries. French fries… and so on. My uncle makes the best potato salad ever and I should have taken more at our Memorial Day party since it was gone when I went back for seconds. This isn’t his recipe but this tastes similar. It’s flavorful and addicting!

Description
A creamy addictive homemade potato salad perfect for summer picnics and cookouts.
Ingredients
- 2 1/2 pounds red-skin potatoes, diced into bite size pieces (1/2 inch – 1 inch)
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon pink Himalayan salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon cane sugar
- 1 cup original Vegenaise (drop to 3/4 C if you like less dressing)
- 4 hard boiled eggs, diced (remove 2 yolks)
- 1/2 heaping cup celery, diced small
- 1/4 tsp celery salt
- 1/4 tsp dill weed
- Paprika for sprinkling
Instructions
- 1. Bring a large pot of water to boil while washing, prepping, and cutting the potatoes. Add cut potatoes to boiling water and salt generously – at least 1/2 TBSP. Keep at a boil for 15 minutes or until largest pieces are fully cooked through.
- 2. Make a dressing by mixing the apple cider vinegar, Himalayan salt, fresh ground black pepper, and sugar together.
- 3. Drain water from potatoes and place them in a large bowl. Stir the dressing and pour over the potatoes. Lightly mix potatoes to incorporate the dressing without breaking them up while they’re still hot. Place the bowl into the fridge uncovered until the potatoes are cool, 1-2 hours.
- 4. Once the potatoes are cool, add Vegenaise, diced eggs, diced celery, celery salt, and dill weed. Mix gently to incorporate all the ingredients before sprinkling a layer of paprika over top to finish.
Notes
- Use red-skin potatoes and leave the skins on! Gold and russet potatoes work but they don’t bring the same flavor – try to use red-skin potatoes!
Snack: 3:30 pm
One small pear cup in 100% juice. This has been one of my favorite snacks for the last year or more but it’s pulling its weight this pregnancy when I’m needing something simple.
I had a major chocolate craving yesterday and I also needed an ingredient for dinner so I went off to Target and jumped off the deep end. I bought a mixed bag of chocolates, Tim Tams, and Talenti gelato… and they didn’t have the actual thing I went for. Boo.
Dinner:
I hadn’t been feeling great all afternoon and I knew that a regular meal would give me miserable reflux like the night before. I was craving soba noodle stir-fry but I knew I wouldn’t be able to handle it. Taco Bell had a free taco deal so Brady had Taco Bell on his way home from work while I picked at the chocolates, toast, and a little coleslaw.ย
Not a perfect day but that’s pretty normal with this pregnancy so far. Having a normal appetite again is one of the things I’m most looking forward to postpartum besides getting to cuddle with my little one!
