The Best Cornbread Muffins Recipe | Friday Favorites #6

Happy First Day of Fall! I thought fall had started a few weeks ago because the temperatures had dropped into the 60s. I was just about to pull out my fall sweaters and all of a sudden it was warm again. Some of the trees have started changing color but it’s still overwhelmingly green and pretty hot around here. Either way, to commemorate the start of a new season, I’ve got one of my favorite recipes – Cornbread Muffins! – to share with you as well as a few Friday Favorites!

Cornbread Muffins Recipe

My mom was an amazing cook and even more amazing because the majority of what I ate growing up was vegan AND sugar free because of my dad’s dietary restrictions. One of my favorite meals and often requested for birthday dinners, was my mom’s homemade chili and cornbread muffins. 

Most cornbread recipes out there call for way too much sugar and the muffins basically end up being a dessert with the amount of sugar in them. These have a minimal amount of sugar but it doesn’t take away from the fullness of flavor or fluffiness in the muffins. This recipe is especially healthier if you plan on adding something sweet on top. 

As with any baked goods, cornbread muffins are best when taken straight out of the oven, split open and buttered right away to let the butter melt in. These are perfect with some jam or honey on top or you could do as my husband does and just break a few up and let them soak into a warm bowl full of chili. If you happen to have leftovers the next day, pop ’em in the toaster oven for a minute and they’ll be just as good as straight out of the oven.

If you’re vegan and don’t eat honey, just switch it out for cane sugar, rice syrup, or a natural sweetener of your choosing.

However you decided to eat them, these cornbread muffins are definitely a treat you’ll enjoy!

Cornbread Muffins

Ingredients

Scale
  • 1 Cup Yellow Cornmeal
  • 1 2/3 Cups All Purpose Flour
  • 1 Tablespoon Honey
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 Cup Vegetable Oil
  • 1 1/4 Cup Milk (I use original almond milk)
  • 1 Cup Canned or Frozen Corn (Optional)

Instructions

  1. 1. Preheat Oven to 375°F.
  2. 2. In a medium large bowl, mix together cornmeal, flour, baking powder, and salt with a fork or a whisk.
  3. 3. In a smaller bowl, combine the oil, honey and milk.
  4. 4. Fully mix in the bowl of wet ingredients to the larger bowl of dry ingredients stirring until no large lumps remain.
  5. 5. Add in corn kernels if using.
  6. 6. Use a regular non-stick muffin tin and divide the mixture into the 12 spaces.
  7. 7. Bake for 22-25 minutes at 375°F or until just before the tops begin to brown.
  8. 8. Allow to cool for a couple minutes before removing the muffins from pan.
  9. 9. Enjoy!

They have a soft comfy lining, they’re moisture wicking, AND THEY HAVE POCKETS. Not little wimpy credit card sized pockets but bigger than my phone sized pockets. Super comfy and I love wearing them. Wren and Ivory Dresses

I bought this dress from Wren and Ivory a little over a month ago and I’ve completely fallen in love. It is seriously the softest fabric I’ve ever felt and it feels so incredibly comfortable on. I feel like it’s also the kind of dress I can get away with wearing year round so that’s another win. It’s a maternity friendly dress like many of the clothes sold by this online boutique so it’s good for the future as well. NYX Honey Dew Me Up

I use this as a serum/primer in the warmer months of the year when it’s too humid to use a facial oil but I still need a light moisturizer. A little goes a long way with this stuff and you have to rub it in all the way a let it dry for a minute before putting on your makeup. It’s a tad sticky feeling straight out of the container but when it soaks into your skin it feels moisturizing and is a great base for my makeup. I just purchased my second one so it’s an obvious recommendation.

I recently went on a hunt to find a good fall nude lip color and I decided to try out a couple from the NYX Lingerie line. I love the colors I picked out and I’m actually really surprised with the staying power of the liquid lipsticks. Lipstick tends to be extremely drying on me but this actually works pretty well for me and I love the colors – The two I have are Ruffle Trim and Exotic.

OPI Taupeless Beach

This nail polish is purple-toned grey nail color heaven. I love it for manicures and pedicures and it’s perfect for this time of year.

Thayer’s Witch Hazel in Rose

I started using this a couple weeks ago in tandem with my Simple Skincare Micellar Water. I’ve been using this micellar water for 2.5 years as my primary cleanser. I tried the Garnier one when it first came out but I hated the formulation; it was too soapy feeling and left a residue on my skin. Anyways, I’ve been hearing a lot on witch hazel for the last couple years because of its healing properties and I figured it was worth a try.

Hulu Watchlist

I’ve subscribed to Spotify for about the last 5 years and last week I received a notification about adding Hulu for no additional cost since I had a student membership (my sister uses the account). I guess they’ve created a special bundle with Hulu and it’s included in the $4.99 monthly Spotify cost. I suppose the point is to get you hooked and I think it’s going to work.

We don’t have cable and pretty much get most of our TV entertainment from Netflix. One of my favorite channels is HGTV so you can imagine how excited I was to see all the popular HGTV shows on Hulu! We’ve been loving Fixer Upper (Chip and Joanna are just the cutest), Beachfront Bargain Hunt, and Flea Market Flip. We also just started the most recent season of MasterChef which is also a favorite from a few years ago. They’ve got an awesome selection of movies and also old classic shows like I Love Lucy and The Brady Bunch.

This may sound like an advertisement for Hulu but I’m really just so excited about our new viewing options.

 

Lastly I’d like to touch on all the devastation that’s been going on due to the lastest hurricanes and it’s been breaking my heart to hear of all the people who have lost their homes, possessions and even loved ones. Puerto Rico especially is home to family members of some very close friends and those family members are among the people who have lost everything. Please keep them in your thoughts and prayers and consider donating to a reputable relief organization as this is going to take years to recover from.
