Hey there Monday! How was your weekend? This summer is flying by way too fast for me.
Weekend Recap
Today I’m feeling really sleepy after a long day of driving sitting in the car watching my husband drive for 10 hours straight and then going to bed really late. But we’re back in Michigan and it’s only a few more days until Brady is officially done with PT school!
On Friday I finally got around to doing something with the peaches I bought last weekend. It was either crisp or pie and as my pies still have a ways to go before being Grandma status, I decided on peach crisp. I’ve made peach/apple crisps a few times but I always mess up the crumble by mixing too much so I was determined to get it right this time. Please tell me I’m not the only one who has struggled with this!
This peach crisp was a win! It was so warm, crumbly, flavorful and melt in your mouth delicious. I’m going to keep making this over and over until there are no more fresh peaches to buy. The pecans also added a something special to the topping. This recipe has a lot of added sugar so at some point I’d like to work on making it a little more healthy without compromising the yummy flavors. This is the recipe I followed but I used a couple less tablespoons of butter and tiny bit less sugar on the peaches.
Brady and I spent Saturday afternoon with my family and we downed the entire crisp. Confession, I ate about 1/5-1/4 of it by myself it was so amazing. Hanna had just gotten a haircut and I’m pining for her gorgeous waves. This girl is the definition of #hairgoals
On Sunday we roadtripped to MI but we took a little longer to get started and didn’t end up leaving the house until just after 12.
We had a fairly easy trip except for the insane storm that we drove through in Western PA. The rain was coming down so hard that we could barely see the road. We passed a whole line of cars that had pulled over on the turnpike to wait it out. Luckily it only lasted for a few minutes. I also struggled to really get comfortable with my back despite using a comfy pillow and my back brace.
PMS had me craving some good ice cream so we pulled off into Somerset to pick up this yummy stuff from a Turkey Hill gas station. Brady said the two brands wouldn’t be related but I won.
I started reading Wellth in the car and so far it’s been a good read. It’s about building a life and how to have good overall health. It’s kind of cool because the author (founder of mindbodygreen) started his wellness journey with some insane back issues and he talks about his journey with that. Back pain sucks so it’s nice to “hear” some encouragement and new-ish tips about how to deal with the pain.
A few hours after the ice cream binge, we stopped in Ohio for some dinner and I was craving something fresh so I tried Panera’s new watermelon feta salad. This. stuff. is. the. best. It’s such an awesome summer salad and would be perfect for parties/picnics. I didn’t like it with the greens because I feel that it overwhelmed the good flavors of everything else so I picked them out and ate most of the salad without the arugula. I can’t wait to adapt this recipe for a homemade-Meagan version.
The midwest is flat. So flat. I hated it while I was living in Michigan for almost 6 years, but I’ve realized that I actually kind of miss it because the sunset viewing over all the farms and fields is so perfect. Do you ever feel like you focus too much on the negative things that you forget to remember all the awesome blessings you have?
We got to watch this sunset evolve for well over an hour. As we were driving on the last few back roads to get to my cousin’s place, it was mostly dark except for these deep, deep red patches in the dark clouds. It was gorgeous. Add to that the millions (probably) of fireflies that were popping up EVERYWHERE! It looked like fireworks going off in the grass. I wish I could have sat out with my camera and done some long exposures because it was such a beautiful view.
Today I’m catching up on some projects and working from the library of my alma mater. I think I claimed to hate it while I was here, but there are a few things that I really do miss about living up here.
Workouts
I managed to squeeze in 2 good workouts this weekend on Friday afternoon and Saturday night.
On Friday, Hanna and I went to the pool for our swim. I’d been cramping and feeling pretty miserable the whole day so I had a hard time getting into it well. I swam 1000m in 24 minutes exactly. I’m hoping for at least a couple minutes faster in 2 weeks (AHHH) but I think not stopping to turn around every 25m is really going to make a difference.
Saturday was a stinkin’ hot day. It’s been insanely humid in MD this last week and it was just so hot you didn’t even want to try venturing more than a few feet away from aircon. I didn’t leave for my run until it had been dark for a little while but it was still crazy humid, just a tad more tolerable without the sun. This was the first run Brady’s joined me on in a while so it was nice to have my running buddy. I iced my knee for a few minutes before going because of the IT issues I’ve been dealing with.
I’ve been trying to take the hillier routes in the neighborhood because hills are such a weakness for me. I think of it as me running a super heavy backpack up a steep hill because of all the extra weight I’m carrying. Running would be so much lovelier with a bit less weight.
We ran 1.7 miles straight (with a .1 mile of walking after a big hill) and did 3.15 miles walking. 1.2 miles of running a a 12:08 min/mi pace and .5 at 13:16 min/mi. I always feel the most accomplished and proud of myself after a run because, for me, it takes more effort to put out a good run than any other exercise.
