Description
A healthy-fresh summer pasta.
Ingredients
Scale
- 8 oz long, thin pasta
- 1 medium-large tomato, diced
- A handful of fresh basil leaves – chopped or sliced into ribbons
Dressing
- 2 Tbsp extra-virgin olive oil
- 2 Tbsp freshly squeezed lemon juice
- 1/2 tsp Himalayan pink salt
- 1 clove of garlic – crushed (or 1/8 tsp of garlic powder)
Instructions
- Prepare the pasta according to package directions.
- Mix the olive oil, lemon juice, salt, and garlic to make the dressing and then combine with the tomatoes and basil.
- After the pasta is done cooking, drain, and run under cool water if you want it to be like a salad instead of warm pasta. Either way, it’s delicious!
- Gently mix the tomatoes and dressing into the pasta and serve immediately.
Notes
- The fresh ingredients in this recipe are what gives it the extra burst of flavor so use fresh lemon and basil when available.
- If you need cheese, sprinkle a small amount of Parmesan on top or slice some fresh mozzarella to make it into the perfect Caprese pasta salad.
