Apple Picking, Meal Planning, and Calorie Counting

You know how last week I posted about the various bad things that happened all in a row? I was determined to change my fates but not before getting punched a few times first. Apparently I can’t survive without a phone because it tells me everything I need to know, like what the temperature is and how I should dress for the day… so after my phone died, I got a new S7 and while in the process of looking for the right screen protector and case to buy, I dropped it when I was getting out of the car for church and smashed the screen on both top corners of the phone. Sigh. Then on Sunday, I accidentally broke my glasses beyond repair. I mean it was time for new ones but still… now I have to wear contacts until I can get new ones. I don’t love wearing glasses but ever since an eye infection I had in 2011 my eyes have not loved wearing contacts so I rarely wear them anymore.

But that means today is new glasses shopping day! And grocery shopping. Now that I’m at home more, I’m getting back into meal planning. I’m going to be working with a friend who works at a weight loss clinic and I’m going to start counting calories again. ๐Ÿ™ It’s not my favorite but overeating and eating/drinking too much sugar are my biggest roadblocks so hopefully being more mindful and staying accountable is going to make a difference.

I’m trying to step away from consuming as much sugar so making my own foods from scratch will really help cut down on all the processed sugars in pre-packaged foods.

This week’s meals:

  • Roasted Veggies (Broccoli, onions, carrots, beets, potatoes) +and cooked beet greens
  • Celery Loaf
  • Tofu Quiche
  • Noodles and Stir Fry
  • Fried tofu and veggies (we had this last week and it was my fave meal of the week!)
  • Homemade beet and goat cheese bagels
  • Creamy Cornmeal Polenta
  • Steel Cut oatmeal with apples
  • Boiled eggs (snack and breakfast booster)

I’ve never made bagels before but they looked so amazing I knew I just had to try making them. The timing was perfect because I saw the recipe just a day after picking beets at the farm!

On Sunday, Brady and I went to Larriland Farm with my brother and Lisa to pick apples, beets, and broccoli.

I’ve already used one of the heads of broccoli to make broccoli soup and I’m going to use some for the roasted veggies. The rest I’m going to freeze for dinners or other recipes. I tried a different recipe for the soup this time and it wasn’t my absolute favorite. I think I liked the one I made last year better but I want to find a good middle ground because the other one has a lot more cheese and isn’t the healthiest ๐Ÿ˜‰

I almost had a heart attack looking at the flowers because there were bees all over the place. Now I know they’re more interested in flowers than in me… but ever since finding out I was anaphylactic-allergic last year, I get a little panick-y when they fly right past my head!

I’m planning on making applesauce with the apples we picked but I’d also like to try something else as well since we have quite a few apples and I’d like to go pick more!
